# Steps:
01 - Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
02 - In a mixing bowl, whisk together the egg, coconut yogurt, honey or maple syrup, vanilla extract, and sea salt until combined and creamy.
03 - Place bread slices on prepared baking sheet. Using a spoon, gently press the center of each slice to create a shallow well while maintaining a border.
04 - Evenly divide the custard mixture among the bread wells. Bake for 10 to 12 minutes, until custard is set and bread edges turn golden.
05 - Allow toast to cool slightly. Add diced mango, pineapple, kiwi slices, shredded coconut, and lime zest. If desired, drizzle with additional honey or maple syrup before serving.
