Colorful noodles in a cloud-like, creamy sauce. Fun, lively, and great for sharing with friends or family.
# Ingredient List:
→ Noodles
01 - 10.6 oz dried wheat noodles or ramen noodles
02 - Food coloring gels (pink, blue, yellow, green; gel coloring preferred for vibrancy)
→ Cloud Sauce
03 - 6.8 fl oz whole milk or plant-based milk
04 - 4.2 oz cream cheese or vegan alternative
05 - 1 tbsp unsalted butter or vegan butter
06 - 2 tbsp grated parmesan cheese or nutritional yeast for vegan
07 - 1 tsp cornstarch
08 - 1/4 tsp salt
09 - 1/4 tsp white pepper
→ Garnish
10 - 2 scallions, finely sliced
11 - 1 tbsp toasted sesame seeds
12 - Edible flowers or microgreens (optional)
# Steps:
01 - Bring a large pot of water to a boil. Divide the boiling water into separate heatproof bowls, allocating one bowl for each desired color.
02 - Add a small amount of chosen food coloring gel to each bowl, stirring thoroughly to achieve the desired vibrancy.
03 - Separate noodles evenly among bowls. Cook each portion in its colored boiling water for 2–3 minutes less than package instructions, ensuring noodles retain their texture.
04 - Drain colored noodles promptly and rinse under cold running water to halt the cooking process. Set noodles aside.
05 - In a saucepan over medium heat, melt unsalted butter. Add cream cheese and stir until smooth and silky.
06 - Whisk in milk, grated parmesan, cornstarch, salt, and white pepper. Stir constantly for about 5 minutes, until sauce thickens to a creamy consistency.
07 - Add prepared noodles to the saucepan, gently folding to coat. Keep colors separate for a cloud-like presentation, or swirl for a marbled effect.
08 - Serve immediately topped with sliced scallions, toasted sesame seeds, and edible flowers or microgreens if desired.
