18 - 2 tablespoons unsalted butter

20 - Pinch of sea salt

# Steps:
01 - In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring to a boil over medium heat.
02 - Stir in the vanilla extract and finely grated apple. Cook for 1 to 2 minutes, allowing the flavors to blend.
03 - Decrease heat to low and add all-purpose flour, ground cinnamon, nutmeg, and cloves. Stir vigorously until the mixture forms a smooth ball and detaches from the sides of the saucepan, about 2 minutes.
04 - Remove from heat and allow the mixture to cool for 5 minutes. Beat in eggs one at a time, mixing thoroughly after each addition, until the dough is supple and glossy.
05 - Transfer the prepared dough to a piping bag fitted with a large star tip.
06 - Pour vegetable oil into a deep frying pot and heat to 350 degrees Fahrenheit.
07 - Pipe 5-inch lengths of dough directly into the hot oil, cutting each strip with scissors. Fry 4 to 5 at a time, turning occasionally, until evenly golden brown, 2 to 3 minutes per batch.
08 - Remove churros using a slotted spoon and set on paper towels to drain. While still warm, toss each churro in the spiced sugar mixture to coat.
09 - For the caramel, combine granulated sugar and water in a small saucepan. Cook over medium heat without stirring until the syrup reaches a deep amber color, 5 to 7 minutes. Remove from heat and rapidly whisk in unsalted butter, then blend in heavy cream, sea salt, and vanilla extract until the sauce is smooth.
10 - Present churros warm with caramel sauce for dipping.
